Fabiola Jiménez is a fourth-year Food Engineering student at the University of Costa Rica, where she combines her academic training with hands-on experience in nutrition, food safety, and sustainable product innovation. Her work centers on applying scientific knowledge to address social and environmental challenges through food systems.
Fabiola is passionate about designing food products that are both nutritious and sustainable, with the potential to influence consumer behavior and improve public health. She believes that food is not just sustenance, but a tool for empowerment, education, and systemic change.
Through the Kirchner Fellowship, Fabiola hopes to expand her impact by supporting early-stage ventures that align with her mission: nourishing communities while fostering environmental resilience and social equity through science-based innovation.
